Delicious Chicken Pot Pie




On these cold winter days in Michigan I love to cook warm, hearty meals.   Something to fill you up and keep you going all day long.  Long days that can involve a lot of snow plowing and shoveling! Then after you eat you can curl up with a nice warm blanket and take a nap!

We look out our windows past the icicles hanging down to see snowmobiles whizzing by our house.  Michigan is definitely the winter wonderland! 



Out of this recipe I was able to make four little ramekins plus another 8x 8 pan full for a freezer meal for a lazy day.

1 1/2 cups of chopped chicken breast
1 small onion (peeled and cut up)
2 cups of green beans
1 cup of peas
1/8 tsp. black pepper
1/4 tsp. salt
1/4 tsp garlic powder
1/2 tsp of poultry seasoning
1 1/2 cups of milk
3/4 cup of flour

Biscuit topping

2 cups of self-rising flour
1/3 cup shortening
3/4 cup of milk


Cook the chicken and onions in a pot with enough water to cover until done.  Drain the liquid saving 1- 1/2 cups.  Sit the chicken aside. In the saucepan stir the stock liquid with seasonings and 1/2 cup of milk. Bring back to a boil.

Mix the rest of the milk and flour together in a separate bowl. Slowly add a little of the hot liquid to the flour mixture and stir. Then pour mixture back into the pan of stock stirring constantly until thickened.

Pour beans, chicken, and peas into a large bowl.   Then add the sauce and stir to mix.  Pour into pans and top with biscuit topping.

Mix self-rising flour with the shortening and cut into small pieces.   Add milk to make a dough.  Roll out in to a rectangle and cut the dough into approximately 8 biscuits.

Pour mixture into pans and top with biscuits.

Bake at 450 degrees for 10-15 minutes or until the chicken mixture is hot and biscuits nicely browned.
