The garden is really producing and so far we have picked three bushels of green beans. They have been on the table multiple times this week. We just can't get enough! It's a good thing because we have more to pick!
This is what my kitchen has looked like the past few days! |
This morning after I break some more green beans I will dry them in the dehydrator (shuck beans).
Our menu changes frequently in my home with use of leftovers, garden produce, or special occasions that come up. With that in mind I have decided to tell you what we have had this past week instead of what I have planned ahead.
This last week's dinner menu:
Sunday Smoked sausage and flavored rice (rice leftover from making cabbage casserole), leftover green beans, cornbread, and baked potato.
Monday Made the leftover cabbage casserole into soup by adding a quart of tomatoes, potatoes, and leftover green beans. It turned out great!
Tuesday Hot dogs (grilled)
Wednesday Chicken grilled, fried cabbage, green beans, and cornbread.
Thursday Leftover hotdogs
Friday Meatless day- green beans with potatoes, coleslaw, cucumbers, tomatoes, and cornbread.
Saturday Pork chops with fresh cucumber, sliced tomatoes, leftover green beans, coleslaw, and cornbread.
Breakfasts:
Husband usually survives on a honey bun or fried bologna for breakfast. Youngest daughter skips breakfast.
This is what I had for breakfast this week:
2 eggs with zucchini hash browns
Made way too much oatmeal so I made sure husband ate a bowl. Apparently I wasn't awake as I thought. A couple of day's of oatmeal and I was done. I know I wasn't frugal but I threw the last cup away.
Cereal with milk
Two eggs with cheese
Exhausted from bean picking and canning -I had the last leftover grilled chicken breast, plums and strawberries. Weird but it was good.
French toast with syrup this morning. I made enough for tomorrow.
