We are having a heat wave (it's 30 degrees and with a wind chill of 22). Really, the snow has just about melted and I can see the brown grass underneath. Well, the ice all around really hasn't melted yet but there is hope that it will melt soon. What got me excited this morning is hearing about Thursday's weather forecast. It's looking great with a high of 65 with a chance of a couple of showers. Spring has sprung!
Should I trust the weatherman for planning the menu this week? You see, I have dreams of grilling out (also dreams of gardening and hanging clothes on the line). We really only have the one day, then the next day it goes a little down hill again. If I could grill out a couple of dinners I would be so happy! I'm just going to plan on it and hope it works out. Yes, I'm convinced it will work out. How's that for being positive! Okay, if it doesn't work I'll just use the George Foreman grill.
Here is my menu for this week:
Monday Leftovers (chicken & salad from yesterday)
Tuesday Hot dogs and chili sauce
Wednesday Low Carb Pizza (frozen make ahead dinner)
Thursday Grilled rosemary Pork chops, green beans,
Friday Grilled Hamburgers with big mac dressing
Saturday Grilled chicken and sweet potatoes
Sunday Happy St. Patrick's Day! Corned Beef and Cabbage

It feels like spring is coming so late this year! I hope you do get to grill and garden soon. Your menu sounds right up my husband's alley, lots of his favorites- 'll have to copy it for him one week!
Today Kelsey was even warm so much so I can't wait till Thursday! I hope your husband loves it!
