Keeping Busy:  


So here is how I've been trying to keep busy in the kitchen! 


Potato Pancakes with the leftover mashed potatoes.  I can never get the right amount of mashed potatoes.  One day someone decides they don't want mashed potatoes and I'm stuck with leftovers.  This is a great way to use them up.

I watched the Egg Hack on Simply Sarah.  I made it this morning and it was delicious!  Okay, it was ugly but delicious!  She is my new favorite youtuber!

Last night I made mashed cauliflower pancakes. I used almond flour, spices and an egg. Pretty good.

I love those potato pancakes. My Mom made them often when I was growing up. The egg sandwich looks yummy! We have been making breakfast sandwiches on those big soft Aldi bagels. We cook 3 eggs with diced ham flat in the pan and then cut it in half and fold it onto a toasted bagel. top with a slice of cheese and eat. So good! Sara looks like she has a lot of good cookin' videos! Have a good day!

We love potato cakes here. When I make mashed potatoes, I always fix extra to ensure there will be leftovers for this purpose. I have tried to fix them with freshly cooked potatoes, and it doesn't come out as good; being thoroughly chilled makes a big difference. I also check your free list each day and have gotten dozens of wonderful free books as a result. Thank you!

I am doing fine in East Tennessee. My redbud tree is in full bloom. The dogwoods are budding and the oak trees are beginning to leaf out. Just staying home & getting things delivered by Walmart or family.

I've heard people that use fresh but I have never tried. Thanks for the tip Carol. It all makes sense to me now why mom used leftovers.

I saw this egg idea for the first time a few weeks ago. I don't keep bread so I haven't tried it yet....let me know how hard it is.

It is so hot here today. We don't have our ac in yet & it's hitting 84' plus our southern humidity. So today I just kind of drug around with my grandson.

My daughter-in-law brought me eggs, tp & kleenex when she picked up the baby. She had to stop at Harps after work & said they had it so she bought for me even though she didn't need it. I'll store it.

They are just the plain bagels. I don't think they are very good as bagels but they make such good breakfast sandwiches that we keep them in the freezer just for that. The eggs we cook is for two sandwiches.

Our govener here in MN extended the stay at home order until May 4. I'm getting restless. I'm trying to be grateful to have food on hand but I'm craving ice cream, which we don't have. My broken arm was whacked at the grocery store and I spent 3 hours in the ER, but the upside was an xray that showed, finally, new bone growth. Exactly twice as long as it should have taken to start healing. Meanwhile I can't get a follow up appointment with the orthopedist and my hubby can't get follow up for his pneumonia and his appointment with his lung specialist was also cancelled. Be we aren't sick!

I've been keeping busy by canning. Right before all the craziness started, I found Boston Butt for $0.99/lb. I bought 6. I canned most of them, used one to make 6 pounds of sausage, and put one in the freezer to probably make carnitas with. I'm going to use the trimmings to make pork stock and, once I get the beans, pork and beans. Since my yard is full of dandelions, I made dandelion jelly. I also made some Cheerwine jelly. Oh, I cleaned out the freezer, too, and canned four quarts of chicken. I think I'm done canning for awhile! lol!

Thanks Lana, I can't wait to go shopping again..yet I can if you know what I mean. I'm going to go as soon as it's better and buy those for breakfast sandwiches.

Jenny, It was hot to us here yesterday for a Spring day too. It was 70 but today is maybe going to hit 40.
I bet it was hard without air. Hard to do anything.

Our governor is talking sometimes this morning. We will now how much longer it will be then. I hope that you will get back to your doctors soon. I'm glad your bone is healing and so sorry about the mishaps. I'll be so happy when we all get back to our normal soon.
