We loved the zucchini lasagna so well I thought I would try my hand this year at dehydrating it.  I've always froze it before but we are running out of freezer space.  So now is the time to try something new.  I'll be drying peppers next.  I'll let you know how it all turned out this winter.

I also have rosemary hanging up in the house just drying the old fashioned way.

The tomatoes are out there but I just need to harvest a few more to be able to have enough to can.

Thanks for the reads as always! I have Rosemary drying on a paper on the window sill. We like using the zucchini in lasagne as well. I have done the zucchini in the dehydrator but can't seem to get the crispness I think it needs so,please let me know how yours turns out and how long you dry it for. Thanks
think it should have dried . I have a Nesco as well so please let me know how yours does and abt how long you dry it for. Thanks

So I put the strips in last night at 7 p.m. And checked them before I went to bed at 1030 p.m. I then decided busy to let them go all night. They were crispy at 6 this morning. So we will see how it goes I guess. I'm tired of ,zucchini bread so I'm glad we like them another way.

I dehydrated my first zucchini this morning & am super happy with how it came it. It's light & crispy just like potato chips. I did one plain to see how the texture would be. Next time I plan to soak in vinegar then salt. I think we'll really enjoy these as a low carb snack.

I have a friend who told me about this Youtube channel. I haven't had time to look into it much yet but she told me I could find lots of great dehydrating ideas here. Their squash & zucchini chips look really good.

I'm planning to take a few days of rest. I think I've pushed myself too hard this week. My bp has been up all morning & I can't seem to get it to go down. So off to take an afternoon nap.

I haven't used the dehydrator before, but good to know that it works for zucchini. My son wants to make some jerky using my Dad's old dehydrator, but I think I'll try some veggies first to make sure it works. Cheaper and easier.

Your low carb zucchini snack sounds delicious. I'll look up that you tube channel ..need to learn more.
