Whether your working, watching children, going to garage sales, or tending the garden all day, sometimes you just need a easy meal. A recipe that doesn't require a lot of thought and a lot of ingredients. There are no big steps to follow and you get to use those leftovers!
Stuffed Baked Potato, is my first recipe for my new series: Quick, Easy, and Cheap Meals.
How to bake your potatoes:
Crockpot method for cooking potatoes: I poked holes in the large potatoes and wrapped them with foil. On low it took about 5 to 6 hours. Just test them ahead of time (use a fork to see if they are tender). If they are not done when you need them, stick them in the microwave for a few minutes.
Microwave: depending on your wattage and size of your potatoes about 6 to 8 minutes for a couple of potatoes. I always poke holes in them.
Oven: If you have something else in the oven then stick the potatoes in there with them. At 400 degrees it takes about an hour.
The toppings: Grab what you can out the refrigerator. We had shredded cheese, chives that I got from a mad dash to the back of the garden, butter, and leftover bacon cut up. We all were sad about the lack of sour cream but we got over it.
Other toppings you may consider: sour cream, chili, and ham. Really, the possibilities are endless!
We paired this with a bowl of tomato soup and crackers. A salad would be great too.
My hope is that you go to this series when you need a quick idea for dinner. That this recipe will keep you out of the drive-thru line and you will feel good about what you are eating.

I make stuffed baked potatoes with leftovers a lot. Soups, stews, chili, hot dog sauce - you name it. Makes for a great dinner.

Thanks Vickie! Potatoes sound great and inexpensive. I worry about folks today who eat out so much. So expensive and maybe not so healthy. We don't go out much but just went to a Chinese buffet. $24 for 2 people inc. drinks, which is fine, but if you do it alot it really adds up. Save some money everyone and eat more at home. It's a skill that will last a lifetime and save so much money.
Having easy and cheap meals sometimes Nancy I think is the trick. That way you have something fast when your just too tired to cook. People think you have to cook gourmet all the time...a big huge meal. It's great to eat out sometimes though but like you say it can add up quick!
