Garden Update: The Garden Tally

Husband plowing up the garden Vickie's Kitchen and Garden

He got out there finally and did it.   Plowed right through the mustard greens.  Really, I think he just loves the destruction.   It was a great way for him to also find out if the old tractor worked or not.   It still is not turning as he wants but it will do for now. It's back to researching and making it better.   Something for him to do this winter.

Our garden is a joint effort.  I could not have this big of garden without him (my husband) that's for sure!

The Garden in the spring -Vickie's Kitchen and Garden

Here is the approximate grand tally of using and preserving our produce this summer.  What a blessing it was!

Leaf Lettuce             Leaf Lettuce was the first thing I planted in the spring- we love having fresh wilted lettuce and salads!

Mustard greens          We canned 14 quarts of mustard greens (4 bushels).

Peppers                     Froze two gallon sized bags of sliced green and banana peppers

Tomatoes                  Canned Salsa and tomato jam.

Green Beans               Canned approximately 45 quart jars.  Many dinners were graced with a side of green beans.

Watermelons from our garden

Watermelon             2 small watermelons  (they were wonderful)

Zucchini                   What a harvest!  Too many to count -froze many bags of  zucchini and loaves of zucchini bread.

Cabbage                    We had some big cabbage in our garden this year.   One  weighed a little  over 10 lbs.  I made 12 quarts of sauerkraut out of that one cabbage alone!  Altogether I canned approximately 30 jars of sauerkraut, 7 quarts and 9 pints of canned cabbage, and we loved having fresh cabbage for making fried cabbage and coleslaw.

Beets                       Didn't make it -between the groundhog and planting the second crop too late... we ended up with nothing.
