Apple Cinnamon Donuts
Fall is my favorite season of the year (okay besides Spring). Fallen leaves, cooler temperatures, and lots of Apples make it special around here. It's like a mini celebration before the cold winter sets in. So far this Fall we have had apple pie, fried apples, and these delicious Apple cinnamon donuts that I made the other day.
A little about the frosting: The girls and one little boy in this family are all about frosting. A donut without frosting to us is well is just a donut. The man of the home says that frosting is too sweet for him and just likes powdered sugar. Whoever heard of such a thing as too sweet? Lucky for him, these Apple Cinnamon Donuts are great though whichever way you like them (you could even eat them plain)!
Apple Cinnamon Donuts
Ingredients
1 cup fried apples
2 cups of self-rising flour
2 eggs
2/3 cup sugar
1/4 cup of brown sugar
3/4 tsp ground cinnamon
1/2 cup buttermilk
1 tsp. vanilla
Frosting
2 cups powdered sugar
1/2 tsp ground cinnamon
1 tsp. vanilla
4-5 tbsp of milk
or
Sprinkle on powdered sugar
Directions:
(makes 12)
Fry apples in 1 tbsp butter till softened and they can be mashed well.
While the apples are frying spray donut pan with cooking spray and preheat oven to 425.
Sift together flour, sugars, and cinnamon in a mixing bowl. Add in fried apples, eggs, vanilla, and buttermilk. Beat until combined.
Fill each donut mold 2/3 full with batter. Bake in a 425 degree oven for 8 to 10 minutes or until done. Let them cool on a wire rack placed inside of a large cookie sheet. This will catch any drips when you frost them and make for an easy cleanup.
For the frosting:
Mix powdered sugar and cinnamon together in a large bowl. Add vanilla and slowly mix in milk 1 tbsp at a time with a whisk. Continuing adding in milk till frosting is thick and can be spread easily.
