I'm going to take it easy today and just grab the leftovers meals from last week out of the freezer. We picked a bushel of mustard greens from the garden on Saturday and yesterday I canned 7 quarts. I also made my husband happy by making a cheat meal with mashed potatoes, mustard greens, soup beans, and cornbread (I left out the sugar). There was no meat and he was one happy man. Now that's enough and we are good on cheat meals this week! Now I know why I'm tired this morning- I wore myself out doing the dishes!
Monday From the Freezer: Smoked chicken fajitas (on a low carb wrap)- onions, tomatoes, and peppers from the garden
Tuesday Lasagna- made with zucchini
Wednesday Hamburger stew
Friday Low Carb Chili dog Bake -Using my recipe for hotdog coney island sauce. They loved this last time and I just used my leftover chili! Listen I could put this on the menu once a week or more and they would be happy!
Saturday Big Mac Salad
Sunday Out to eat (I bought a deal for a sub shop)
