Easy Recipe for Swirl Cookies and the Menu Plan for 3/8/22!

 


My Aunt Daisy was the best cook we thought growing up.  The only problem was she was in Arkansas and we were in Michigan.  We only got to go once a year to her house  during the factory changeover to see all the relatives. When we got to her house she always had Swirl cookies stacked on a plate on her counter.  We devoured them.  There were five of us and they were gone in seconds.  Memories are so sweet and so was she. 

Now, she made them from scratch and I have that recipe but I found a lazy way to make them that I love.  

1 bag of Betty Crocker Sugar Cookie Mix (17.5 oz)

3 tablespoons of cocoa

1 tbsp of oil

In a bowl mix the cookie mix according to directions and then put half of the mixture in another bowl.  Add cocoa and oil to one half of the dough and mix well (you may have to use your hands).  You can then put these bowls in the refrigerator for about an hour so it can be rolled easy but I just went with it.  

Roll out both parts separately on a sheet of waxed paper.  Put the chocolate one on top of the white and roll up jelly roll style.  Cut into slices.

Put on cookie sheet and bake at 375 degrees for 5 to 7 minutes or until done.

The hard part of this is letting them cool.  LOL

Menu:

I was so blessed to buy a ham from Flashfood for $8 this past week.  We had a family Sunday dinner of Ham with sides with the daughter and grandchildren.  She took home about 1/4 of the leftover ham and I plan to use the rest of it this week or put it in the freezer.  Well, we needed to fry pork chops first.

Monday                 Pork chops with leftover green beans and mashed potatoes from the ham dinner                                      Sunday 

Tuesday                 Fried Ham Sandwiches with tomato and lettuce (from flashfood) 

Wednesday            Leftover pork chops with mashed potatoes

Thursday               Ham and scalloped potatoes

Friday                    I know I'll be feeling chicken by now so any ham leftover will be frozen.   Baked chicken,  Stuffing (I found a box in the pantry), and leftover scalloped potatoes

Saturday               Chicken salad sandwiches and a salad 

Sunday                  Hot dogs and french fries 


Breakfasts:  eggs, Fried bologna, or oats


Lunch, you are on your own.

According to how much energy and time I have this menu could change at any time (sometimes it's much to the delight of my husband). Looks good though doesn't it?

We loved to visit my Aunt for her homemade rolls and pies. She would often make 20 pies before we got there and we could eat pie anytime we wanted to at her house. We were in Florida and she was in Pennsylvania.

Sunday we had leftover lasagna and salad
Monday was chicken spaghetti from the freezer, broc and cucumbers
Tuesday-meatballs and gravy over mashed potatoes, green beans and coleslaw
Wednesday-skillet tuna noodle casserole, salad
Thursday-black-eyed peas and rice, fried cabbage and cornbread
Friday-chicken broccoli alfredo and salad
Sat-pizza

Oh pie for breakfast...she sounded like a person I would have loved to visit too! Such good memories we have.
Your menu sounds delicious especially pizza..I need to make pizza.

We usually just have a ham for Easter but we have one in the freezer for that so this was a special one for now.
Hope you get a chance to make the cookies!

Back when we went to visit my Husband's Granny in Tennessee she made fried chicken for breakfast fried in bacon grease. Oh my, we thought we had died and gone to heaven!

I've heard about fried chicken for breakfast. That's a lot of hard work for in the morning but it sounds so delicious!
