My Menu this Past Week- 1/9/16

Oh what a mistake I made this week!

My Menu this Past week -the burned pressure cooker

While cleaning out my pan cupboard this week I found our pressure cooker that we haven't used in years. My husband saw it and suggested we make some quick pinto beans.  I had completely forgotten how to use it though so I did a quick google search for a recipe for pressure cooking pinto beans.  Most recipes really don't tell you how to use a pressure cooker but I found somewhere that a commenter said she just let it go full blast. Sounded kind of funny to me especially when I know that a canner has to slow down. What do I know though...so I let the thing go on full blast heat and set the timer for 50 minutes.  Around the 40 minute mark I started smelling a burnt smell and quickly took it off the heat.  This left us with a pan looking like a bomb had hit it, the house smelling just wonderful, and the husband laughing his head off in the living room.

After soaking it all night long and using a SOS pad the next morning it all came clean.  After my husband watched some you-tube videos on how to use a pressure cooker, we gave it another try last night.  Actually I have to tell you the truth....he took over and he gave it another try!   Somehow I don't think he will trust me to use it for a little while!  The beans were turned out thick and soupy just like we like them. Wonderful!

Our menu changes frequently in my home with use of leftovers, garden produce, deals, or special occasions that come up. With that in mind I have decided to tell you what we have had this past week instead of what I have planned ahead.

Sunday         Fish and Chips

Monday        Beef Burritos

Tuesday        Hamburger Stew (freezer meal)

Wednesday   Birthday dinner out (we budgeted for this on our No Spend January)

Thursday      Steak and Onion Sandwiches (steak leftover from birthday dinner out, we used the loaf of garlic bread they gave us for the bun, and used what the cheddar cheese we had instead of swiss).

Friday           Freezer Meal  (recipe that came from the book Made with Love)

Saturday       Pork Chops, Sauerkraut, and leftover  Pinto Beans made Friday night

What was on your menu?
