My Menu Plan for this Week 2/4/19!









We needed to get out of the house yesterday and went for a long ride.   After staying so long in the house I believe it did us well.  I was so proud that we didn't even stop some where to eat.  I did buy a spaghetti squash after stopping by a small market.  

This morning I remembered that Patsy from  A Working Pantry told me you could cook spaghetti squash in the crockpot.




I'm giving it a try, it's in the crock pot this morning.  I loved the thought of saving money on electricity and being able to do other things too without worrying about checking on it.   I poked about 10 or so holes in it with a knife and set the timer for 6 hours on low.  Easy (if it all works out)!  It turned out great!  

Here is what I plan to have on the dinner table this week:


Monday              Thanks to a reader's comment we are having Hotdogs and chili  -potato chips for grandchildren.   Desert will be a banana split made with bananas, cool whip, pineapple, nuts, and sprinkles.  I told them about it this morning to get their mind off having to go back to school after a week off.   It didn't work they both just wanted to come home with me to make it.     


Tuesday             Spaghetti with spaghetti squash noodles

Wednesday        Lasagna with zucchini Noodles  (the best thing I did with our zucchini from our garden is make long noodles and freeze them this past summer)

Thursday           Leftover lasagna

Friday                Marinated Chicken using George foreman, salad and sweet potato

Saturday            Roast with fixings

Sunday              Beef stew (using leftover roast)

We love to go out for rides, too. We just pick a direction and go and it is interesting how many places right here at home we have never seen.

Sunday we had Spaghetti and copy cat Olive Garden salad
Monday was chicken and dumplings, green beans and sliced tomatoes
Tuesday I had planned to have soup but it is so warm that we decided to thaw a sirloin steak to grill tonight, cheese potatoes, salad and bread on the grill
I have the rest of the week planned but I am thinking of throwing those plans out and grilling everyday! And even eating in the screen porch which would be glorious to be outside and warm!

Rides are our favorite past time. It's amazing what we find too and say that we never knew that was there.
That copy cat olive garden salad sounds delicious!
We are having an ice storm right now so I'm a little jealous of your grilling out. That sounds so good. Have a great week!
