On Mondays it seems anything can happen around here and believe me a lot of it does. There are bills to pay, floors to mop, cars to fix, and on and on. It just all piles up through the weekend, then boom it hits us full force on Monday and we are off and running.
Grandkids Sledding this weekend |
I think we have too much fun sometimes on the weekend! Are Monday's like that for you?
That's why I love it when we have leftovers from Sundays Dinner on Monday. Whew, it's always a relief that dinner is just a warm up and serve yourself.
I did manage a little meal prep yesterday. I made a large salad for the next couple of days, I had to use the last of the green onions so I quickly made ham rollups, and I shredded some cheese.
Shredded cheese comes in so handy over the week. Yep, if you can see the glow that's the strawberry jam still sitting on the cabinet. I'll get it put up soon (hopefully)!
One day I'll get brave and show you the mess I make when I get all done with this stuff!
I went to the garage to get the freezer stuff to thaw and knew my hands would freeze with this stuff before I made it back in the house. I looked up and saw the baskets hanging in the ceiling. Yeah!
The strawberry jam is in the basket now...just got to tote it back to the canning shelf. Then later remember to hang the basket back in the garage. Right now it all looks pretty on the counter anyway😀
Menu:
Monday leftover spareribs (I shredded the meat and we had bbq sandwiches and leftover potatoes)
Tuesday Steak, salad, and Potato
Wednesday Big Mac Salad
Thursday Hamburger Stew
Friday Breakfast for dinner -sausage, eggs, and toast
Saturday Baked chicken, green beans, and a salad (didn't get to this last week)
Sunday Chicken salad sandwiches
Breakfasts: Fried Bologna/ham/egg sandwiches, oatmeal, eggs, and leftover sausage and waffles on Saturday.

TR-creamed chicken over mashed potatoes and biscuits, veg and coleslaw
FR-can't remember :)
Monday is try to get it all done day I think Lana!
I want to try cabbage steaks (I made fried cabbage but not steaks)
and creamed chicken sounds divine!
All days the same once you retire. Of course I have no grandkids.
Monday is usually laundry day.
Funny I made cabbage steak Sunday for donner. Did mine with a little bacon grease and seasoning. Sure was tasty.
Retirement is nice Cheryl that's for sure...we sure don't get bored though!
I make fried cabbage (with bacon grease) -I wonder if it's basically the same without the steak added to it.
For the cabbage steaks I cut 1 inch thick slices of cabbage and brushed both sides with olive oil. Salt and pepper to taste and lay them on a baking sheet. Ours were in a 350 degree oven for about 45 minutes. They do get a little charring around the edges which makes them delicious.
Sounds delicious and a great recipe for us! Thanks for the recipe Lana!
