Chicken Salad Croissants



Chicken Salad Croissants are one of my favorite ways to use up leftover chicken or turkey.  This recipe gets used often all year round for something cool to eat in the summer and a way to use up leftover turkey in the Fall.  Another thing that makes Chicken Salad Croissants a repeat recipe on my menu is that is so fast and easy,   Just perfect for a busy weeknight.

You can make this recipe like it is for a big family or half it for a smaller size family.  This dish is also great for potlucks and even showers.  If you don't have time to make a baked chicken you could just buy a rotisserie chicken at a store. While your there buy the croissants already made too.  It will make you look like you spent hours just slaving away in the kitchen (only me and you will know the true story)!  

Chicken or Turkey Salad Croissants

4 cups of diced leftover chicken or turkey

2 stalks of celery chopped

3/4 cup of mayo

2 Green Onions chopped

1 Tbsp. Dill Weed

2 Tbsp. of diced pimentos (optional)

Croissants, split

Mix all ingredients in a bowl and refrigerate for at least an hour.   Fill your croissants and dinner is served!
