Potato Cakes






I sat in Mom's kitchen many times when I was just newly married and watched her cook.   You see, my husband and I were kind of tired of the same old spaghetti and meatballs that I had become very skilled at making.  Let me get this straight she would not let you help her cook in her small kitchen. You could be close just not too close. She needed her space.

She was the type of person that never threw anything away if she could help it (I guess I know where I got that from).   With this recipe I'm sure she thought about the time it took to peel all those mashed potatoes and thought, rather than throw them away why not make something delicious out of them.

Many times as I sit at the table watching  her, I would make her stop and ask "how much are you putting in there."   That's how I was able to write down many of my recipes from her.  I'm the kind of girl that needs measurements...exact measurements would be great. With this recipe though I kind of understood her lack of measurements, you just have to go by the amount of leftovers you have.

These potato cakes are making a great side dish for us today.  We are having them along with our Salmon cakes and peas.   They also would be great with breakfast right next to the sausage and eggs.


Here is her recipe:


Mom's  Potato Cakes


Left over mashed potatoes
1 to 2 eggs according to the amount of potatoes
1 onion peeled and diced
mix in enough flour to make a patty

Mix together to form a patty then fry in grease till brown.

Printable Recipe

1 cup of  leftover mashed potatoes
1 egg
1 onion peeled and diced
4 tbsp. of flour

In a medium sized bowl add ingredients one a time mixing together well.  Form into patties and then place in skillet with enough oil to coat the bottom.   Turn until done and brown on each side.
