Sugar Free Strawberry Syrup






The strawberries are on sale this week here in Michigan!  I kind of went strawberry crazy and bought 10 quarts of them yesterday.  I may go back!  My refrigerator smells heavenly.  I have plans for special desserts like strawberry pie or even strawberry muffins. Right now though I want to have a little treat without the guilt of all that sugar.  


This recipe is very versatile.  It's great to pour this over your low carb ice cream. Oh man, I'm thinking Strawberry Sundays.   But if you're like me and don't really care to eat ice cream unless it's about 85 degrees outside, you could pour some on your pancakes, top an omelette with it (try it), or put it in your yogurt.





Sugar-Free Strawberry Syrup -  (if you are on the Trim Healthy Mama plan this is a FP)






2 cups strawberries (divided)

1/3 cup Truvia

1/4 cup water





Bring 1/3 cup of Truvia and 1/4 cup of water to a boil.  Simmer just until Truvia is dissolved.   Let cool.



Put 1 cup of strawberries in the blender, then add the cooled Truvia/water mixture and blend till pureed. Chop the remaining berries and add to the puree. Mix and enjoy!
