Banana Nut Bread

Seems like you always have bananas you need to get rid of and this recipe makes everyone happy about it! This banana nut bread recipe always works for me.   It moist, delicious and it never fails! 

You will need self rising flour (my favorite is White Lilly).  This helps keep the moisture in the bread.  This bread also freezes well if you don't want to eat it right away.   



Banana Nut Bread

Makes 1 large loaf of bread

4 ripe mashed bananas
1/3 cup of Shortening
2 cups of self-rising flour
3 eggs
1 1/2 cups of sugar
1 tsp vanilla
1 cup of nuts (optional)

Mix shortening and self rising flour together in a medium sized bowl.  Then mix in mashed bananas, eggs, vanilla, and sugar.  Fold in nuts if desired.   Pour into a loaf pan.

Bake in a 350 degree oven for 55 to 60 minutes

Most of the time I leave out the nuts.   No one seems to mind.
