Banana Bread (Gluten-Free, Sugar-Free)


Too much sugar passing through my house lately.  This banana bread did the trick!



I recently was able to buy bananas at 19 cents a pound.  I should say I recently bought a lot of bananas at 19 cents a pound. When I get a deal like that I tend to go overboard.  

They were the kind that looked pretty good on the outside but were overripe on the inside.  We were able to find a couple of ones that we could eat but most of them were ready for me to make into this Banana Bread.  Too much sugar is passing through my house lately and a couple people in the family have requested I make things with different sweeteners.  Of course then we also have the gluten free family member so this is recipe helps a lot in both areas.  

Recipe for Banana Bread (Gluten-free, Sugar-Free)

Ingredients

1 3/4 cups oat flour (gluten free if necessary)

1 tsp. baking soda 

1 tsp salt

1/3 cup Truvia

2 bananas (mash them very well)

1/4 cup applesauce 

1/4  cup Greek Yogurt

2 egg whites

1 tsp vanilla.


Instructions 

Preheat oven to 325.   Mix dry ingredients together, then add the wet ingredients and mix well.  Pour mixture into a sprayed or greased loaf pan.  Bake for 50 to 60 minutes or until done. 

Notes

Make sure to mash the bananas well so they will not be a under cooked banana in there when the loaves are done.

To make oat flour: put oats into a blender and blend until it looks like flour.  

I made the small loaves and muffins out of this recipe too.  It's great to just have a little muffin or a small loaf to grab out of the freezer in the morning (just watch them carefully so they wouldn't become over done).
