Winter is hanging on here in Michigan and won't let go. It was down below 20 degrees here this morning when I took the grand kids to school. I don't want to think about the wind chill. Just freezing. Spring will come though, it always does. Just about the time I give up, things start to look up. When that happens I'll be ready to fire up the grill!
It did warm up just enough yesterday that I could sort the freezer in the garage without getting hypothermia. As I was doing a warm up jog looking around in the freezer and moving things, it didn't take me long to realize well...we are pork chop hoarders. We have enough to last us for a very long time. Really, I could do 2 pork chop dinners a week for 6 months and not make a dent. It was quite a discussion around here -I said, no more pork chop buying and he said, the deals were just too good. In the end, I think I won.
Here is what's on the menu for this week:
Monday Pork Chops and salad
Tuesday We have leftover Chili from Sunday so I'll make a chili cheese hot dog casserole. With all this cold weather my chili mix is getting low. I'll be working on that this week.
Wednesday Slow Cooker whole Chicken with rosemary and thyme, green beans, and biscuits (for grandkids)
Thursday Leftovers
Friday Hamburgers
Saturday Out to eat
Sunday Low Carb Pizza (I hope to remember to buy mozzarella at the store by this time).
