I've been winging it for a long time and not planning dinner menus ... since the covid started really.  It's working for right now so I'll just keep going with it.  

Sunday-       Hot dogs (such a fine Sunday dinner -husband said.  He wasn't being sarcastic -loves hot dogs)

Monday- spaghetti and garlic bread

Tuesday- beef was in the slow cooker for beef and noodles but I couldn't gather up the energy to cook the noodles and side dishes.  So, I stuck the beef in the fridge and we bought Chinese takeout.  You need to realize when your done in.

Wednesday- Beef and noodles plus au gratin potatoes

Thursday (today)-  Beef Stew in the crockpot

Friday-  I know there will be beef stew left so I'm thinking of stuffing it in a biscuit.  Maybe like a hot pocket or something.

I will be so glad when I get this new stove figured out. I am under and over cooking everything it seems. We have eaten out more this month than we normally do even on vacation. It's really time to get back to cooking here!

I think last week was my worst meal planning, as nothing sounded good. At least this week is a little better, we've had beef roast with potatoes, carrots, and green beans. French dip sandwiches from the leftovers. Chicken Stir fry. Tonight will be spaghetti and bread sticks if I get the breadmaker out soon.

Oh it all sounds good this week! I love the ease of beef roast. I think it makes it taste more delicious!

I LOVED your Tuesday comment. Somedays you are just done in.
We are coping-our septic system froze a week ago. Got it pumped out so now it is just a holding tank-we are really trying to conserve water. You never realize how much water you use! Just running water until the hot water kicks in uses alot. We will get thru this and are hoping the system is really frozen, not failed. It's always something!

I do simple meals most of the time. This week we had soup (my 'homemade' canned beef soup) twice. That large can of beef goes a very long way so we also had beef sliders two nights ...I found some KETO buns my husband can eat. YUM! We also had fish one night & my dil bought Freddie's burgers one night.

Tomorrow we're celebrating our son's 28th birthday with sliders & a cake at his house.

Happy Birthday to your son Jenny! I'm glad you found the Keto buns too..they are hard to find sometimes. Freddies burgers sound so good.
