It's been a great year in our garden, we have been so blessed. A couple of days ago we picked 2 bushels of Green Beans (Rattlesnake). I ended up canning 24 quarts! We even dried some for Shuck Beans. Shuck Beans are basically green beans that have been dried in the sun (they can be known also as Leather Bridges).
The only problem we have in Michigan is high moisture in the air and the sun can disappear for days! So I dry them in our food dehydrator. they are so good. Now, they will not be brown, like the proper Kentucky Shuck Bean but taste just as good in our minds on a cold winter day!
How I dried my green beans
1. Pick and string beans. (string beans in my books taste the best)
2. Do not wash - (we wash our beans when we cook them)
3. Lay them flat on the trays -making sure not to over lap the beans.
4. Start the dehydrator -ours only has one setting (cheaper but works great!). This could take a day or two (ours took 2 days) (They will feel hard and brittle-). It may take even longer depending on your dehydrator and the moisture in the air.
5. Store them in a dark cool place.
