My Menu Plan for the Rest of the Week 10/15/19!




Exhaustion after a 10 hour ride home has made it that type of day.  Ok, what should have been a 10 hour trip was really an 8 hour trip.  I looked over a lot and realized he was going 80 most of the time.  I didn't say a word.  I drive too but I don't last too long and I usually obey the speed limit, ha ha.  We are home though and there are clothes in the washer and beans in the crockpot.  

Listen, this is how I cheat on dinner these crazy days.  We bought some Luck's pinto beans while we were down there, so I threw three cans in the crockpot and added a big tablespoon of bacon grease.  I usually cook them for 5 or 6 hours on high.  I throw the cans in the recycle box and no one notices the difference!   Half of dinner is ready!  

So, here is what will be on the dinner table the rest of the week (I don't want to eat out for awhile):

Tuesday             Soup beans, fried cornbread, and  Fried cabbage. Ok, that cabbage is still out there in the garden and listen it was freezing last night.  I've never let it go this long but let's say we will have cabbage if it's still ok.  

Wednesday         Spaghetti -grandkids will be here and they will love that.

Thursday             Pork Chops, coleslaw, sliced tomatoes, and mustard greens.  

Friday                  Leftovers (I'll make enough)

Saturday               Hot dogs and coney island sauce

Sunday                 Meatloaf, mashed potatoes, and green beans.

I hear you on the exhaustion after a trip. The older I get the longer it takes to recover. We had Luck's black eyed peas with a spoonful of bacon grease with our oven fried chicken last night. Soooo good! Luck's now has chili beans and I have gotten a bunch for 25 cents a can but honestly I like the flavor of the Aldi ones better.

Sunday we had ham in the crockpot with potatoes, carrots and green beans and broccoli salad

Last night we had oven fried chicken, black eyed peas, green beans and corn muffins

Tonight is Au gratin potatoes with the leftover ham in them, broccoli and salad

Wed is Salsa Verde Chicken and Rice, Green peas and a salad

Thursday is Chili, cornbread and baby carrots with dip

Friday is Lemon Garlic Salmon, Baked potato and veggie and cucumber slices

Saturday is pizza night (Football is on at Noon which makes dinner so much easier!) We have a BOGO coupon for a nearby place with $7.99 Lg pizzas so we may do that. $4 each for large pizzas is my kind of price!

Hope your cabbage is okay! We have to work on getting plants that are not cold hardy down to 40 degrees into the garage today. I guess summer is really over.

I didn't see the black eyed peas but maybe my mind was just on those pinto beans. I look better next time. I love them too and it's good to have a variety.
Your menu sounds delicious and I don't believe you could make a pizza for $4.00! I need to look into some oven fried chicken and Salsa Verde chicken and rice. They sound so good!
We just picked the cabbage and it was good. Husband found a icicle so it was below freezing for awhile. Brr summer is long gone but maybe we will have an Indian summer.

I reduce the amount of salsa because it is pretty spicy with the full amount. I don't make any other adjustment though. This recipe is so easy and we really like it.
