What I'm Cooking Today!  

I've got a turkey in the oven today, as soon as I can get that stupid plastic thing holding it's legs together off.  We are kind of  having another Thanksgiving dinner with some but not all of the sides.    So it's turkey, mashed potatoes, gravy, stuffing (stove top), biscuits, and leftover soup beans.  

We bought 2 extra turkeys when they were on sale near Thanksgiving.  They have been saved in my freezer for such a time as this.  They are some cheap meat that will go in many meals.  So, tomorrow turkey and dumplings or sandwiches, etc.  Just anything you normally will have chicken in, substitute the turkey meat instead.  Yeah. easy meals here I come!

That sounds delicious! Still no stove so we are planning to go out for a big hot meal at lunch time today.

Yum, your turkey dinner sounds delicious. I have a turkey breast and dressing n my freezer I want to use up this month. We are having chicken enchiladas for dinner tonight though.

You know I found that you just have to have a dinner or you snack all day long. Glad your having a hot meal.

Yum on the turkey dinner! I keep thinking of the Christmas Story movie: turkey sandwiches, turkey salad, turkey gravy, Turkey Hash, Turkey a la King Or gallons of turkey soup. :)
Now you have me craving turkey, and I have an extra turkey and turkey breast in the freezer. I know what will be on the menu soon. Enjoy your Thanksgiving feast!

I used to always buy an extra turkey to keep in my freezer for non-holiday times. They are so versatile in the dishes you can make. Now that it is only me, I do the same with turkey breasts, when they are on sale. Enjoy!

We're having poultry for supper tonight too. I have a ton of boneless, skinless breast to use up in my freezer...a goof in communication with my dil. She picked it up for me at Sam's. I was asking for canned chicken & she thought I wanted frozen.

Each breast is huge & husband isn't a big fan of chicken so I put just one large breast in the crockpot with some ranch dressing & mayo. Let it cook a few hours then add a few TBS of the tomato spread I made last summer. I plan to melt some cheese on that & serve it with mashed cauliflower & something else...maybe asparagus or green beans. I hope it's at least edible.

I was reading your recipe and it sounds good to me Jenny. I hope it was! Some of those breasts are so huge I have to cut it up into thirds to make it.

I think the chicken turned out really good. It was so moist with the mayo...I struggle with dry chicken. And husband said he liked it....he hates chicken meals & cooked tomatoes but he ate it. I'll make it again because it was so easy & he actually finished it all so at least he will eat it.
