After my husband found out that I could make tortillas thoughts of of these Bacon and Egg Breakfast Burritos have been dancing in his head. It made him extremely happy and then he let me know how he wanted them made. I guess then if you think about it, this is part his recipe.
This was a nice and warm for breakfast one morning when the temperature dipped to -10 degree wind chill here in Michigan!
Bacon and Egg Breakfast Burritos
Printable Recipe
Makes 4 Breakfast Burritos (double it if you need to make more)
4 tortillas (homemade or store bought)
1 1/2 tbsp. of butter
2 eggs with 2 tbsp. of milk or 3 eggs
4 slices of bacon, cooked and crumbled
1/4 cup of diced green pepper
1/4 cup of diced onion
1 slice of deli cheese, cut into pieces (if desired)
Crack eggs in a bowl and whisk. Melt butter in a skillet and add eggs. As the eggs are cooking add peppers, onions, and crumbled cooked bacon. Using spatula scramble the eggs mixture and cook till eggs are done. Put 1/4 of the filling on each tortilla and then add 1/4 slice of cheese cut up, if desired, on each one. Roll up the burrito and microwave for about 20 seconds or so until cheese is melted (if added).
