Our Menu This Past Week 10/17/15

After I cook today's meal I will have made my goal for not going out for dinner this past week!   There were so many times I wanted to believe me. I did some easy meals like the leftover steak from the freezer when I just couldn't imagine making one more meal. It's funny how I always feel that way on Wednesday. By the way, the steak tasted so good, just like it came off the grill.

We had some scary moments too through the week.  For instance, the roast for our family dinner this past Sunday was left smelling heavenly in the crockpot while we were at church.  By the time we got home we were starved and ready to eat.  I looked in the crockpot and well.. it had shrunk. The roast seemed like it was only half of what I put in there! We looked at the roast and quietly discussed what to do.  In the end we decided to slice the roast instead letting them get as much as they wanted. I was amazed how far that roast went and we were all full.   There was even enough of it for stew the next day.

Our menu changes frequently in my home with use of leftovers, garden produce, deals, or special occasions that come up. With that in mind I have decided to tell you what we have had this past week instead of what I have planned ahead.

Sunday         Family Dinner -Roast with all the fixings

Monday        Stew (there was enough roast leftover for the meat)

Tuesday       Spaghetti

Wednesday   Leftover steak from the freezer with baked potato

Thursday      Pork chops with sauerkraut and potatoes in the crock pot  (that is the recipe -I put pork chops, sauerkraut, and peeled, halved potatoes in the crockpot with salt and pepper-on high for approximately  6 hours or until the pork chops were falling apart).   My husband now thinks I'm wonderful all over again.

Friday          Leftovers plus an apple pie -now husband thinks I'm the cooking queen!

Saturday      Bean Burritos
