The best think the best thing about co-hosting and linking up at linky parties is that I find some great new recipes to try. Sometimes the parties can be like one great big cookbook! It's always great to expand my horizons and try new recipes.
I read somewhere that if you keep track of your menu for a month you have what you fix all the time. So you need to just switch that around every month. I do disagree somewhat with that because we would get bored with the same old stuff very quickly. I would get bored making it and they would get bored eating it!
I've never made enchilada's before and they turned out so good. It's definitely going to be one of our favorite ways of using leftover baked chicken. Pairing it the second day with Mexican rice and refried beans livened it up a bit and took the leftovers that extra mile.
Our menu changes frequently in my home with use of leftovers, garden produce, deals, or special occasions that come up. With that in mind I have decided to tell you what we have had this past week instead of what I have planned ahead.
Sunday Enchilada's (made with leftover baked chicken from Saturday)
Monday Pizza (daughter bought it)
Tuesday Up North (out to Mcdonald's with grandkids)
Wednesday Leftover pizza (so glad we had some left we were exhausted from trip up north with the grandkids)
Thursday We had three leftover Enchiladas that I saved in the freezer. I made refried beans and Mexican rice to go with it. We also had chopped lettuce and sour cream on the side.
Friday Hot Dogs
Saturday Bacon, Zucchini Hash Browns, and Country Fried Apples
