My Menu this Past Week 1/30/16




We are beginning to love our pressure cooker more and more. I'm not sure why it stayed in our cupboard so long without being used.   This past week we tried making shuck beans in it for the first time. We were actually afraid  to try cooking them this way but we went for it anyway. You see, shuck beans if you buy them cost quite a lot. They are like buying gold!  Seriously...I'm so glad we garden and are able to dry our own green beans.  

They turned out perfect in the pressure cooker!  They only took 60 minutes instead of four hours on the stove. We will be cooking them like this more often.

My other favorite appliance the crockpot is working right now with the hotdogs and sauerkraut. I'll warm up the shuck beans from the other night and make a pan of cornbread then I'm done!    Easy..and tastes great!  



Our menu changes frequently in my home with use of leftovers, garden produce, deals, or special occasions that come up. With that in mind I have decided to tell you what we have had this past week instead of what I have planned ahead.


Sunday             Pizza (make ahead freezer dinner)

Monday            Burger King (gift card from Swagbucks)

Tuesday            Spaghetti and garlic bread

Wednesday     Hot dogs, potato chips

Thursday          Pork chops, shuck beans, mashed potatoes, biscuits (that I made ahead and froze)

Friday                Bacon, potato cakes (made from leftover potatoes from Thursday), scrambled eggs, and toast

Saturday           Sauerkraut and hot dogs, leftover shuck beans, cornbread
