Menu Plan for this Week 9/10/18

Last night I brought in a few small sugar pumpkins and baked them in the oven along with our cheeseburger pie.  I also had a spaghetti squash in there.  I figured while I had the oven going I would fill it up.  I made pumpkin muffins using my banana bread recipe (sugar free) and they turned out great!  I tried one hot and realized that I need to let them cool that way I could taste the pumpkin! Sometimes I'm worse than a kid and can't wait.  

Let me tell you there is nothing more satisfying then cooking a pumpkin and using that in a recipe.  For some reason it just made me feel like I had accomplished a great feat! I conquered the pumpkin! I'll be making adjustments and writing  the instructions on the recipe soon. 


Here is my menu plan for this week! 

Monday        Spaghetti using spaghetti squash and leftover cheese burger pie

Tuesday        Baked chicken with rosemary and thyme and a salad

Wednesday   Date Night with husband  (daughter is on her own)

Thursday      Chicken fajitas

Friday           Pork Chops, green beans, 

Saturday       Leftovers

Sunday         Roast and vegetable sides
